Opened in 2016, and located in the heart of the Elizabeth Quay promenade The Reveley focuses on innovative food, creative cocktails & an impressive wine list.

Perth is the capital and largest city of the Australian state of Western Australia. It is the fourth-most populous city in Australia, with an estimated population of 2.06 million with a vibrant leisure & dining scene.

The Reveley is spread over 3 floors with the ground floor catering to family dining. The Middle floor their À la carte Bistro and the top floor houses Henry’s Rooftop Tapas Bar.

The main kitchen on the middle floor services both the bistro and the ground floor dining while the top floor tapas bar has its own satellite kitchen with Adande drawers featured in both kitchens.

Executive Chef, Ben Keal, originally from the United Kingdom, has been in Australia for some 14 years. Ben hails from Porlock in England & was trained in the south-east of France. He has worked in restaurants throughout Europe and Australia, with his focus now on his passion for local yet sustainable produce, resulting in a range of classical European fare.

Ben originally spent 9 years in Melbourne before coming to Perth and working in the city for some 5 years now. Ben runs a team of 11 chefs at the Reveley and 9 others at the group’s popular restaurant, Stables.

Ben had a preference for drawers in service areas to begin with, so the advantages of Adande’s patented Hold the Cold® technology really appealed. Adande drawers being incrementally controllable by degree, and within a large temperature range (-22°C to +15°C), was a clear advantage as Ben required both refrigerator and freezer units in the Service area of what is already a tight kitchen space.

Ease of cleaning and the GN racking system for drawer management (able to hold pans up to 200mm deep) were both useful and practical features that are fully utilized in the day to day operation of the kitchen. “I particularly love the flexibility of the Adande drawers, and my Team all agree they are a pleasure to use. They really are so practical too, especially with the speed and ease of cleaning.“

Reveley is expanding the kitchen to accommodate their growing popularity and Ben has ensured that more Adande drawers are included in the extension.

“We have noticed that the temperature stability prevents ice crystallization and spoilage of food as it does when warm air infiltrates conventional fridge/freezers by the repeated door or drawer openings. This means our ingredients and our dishes are of the utmost quality for cooking and serving.”
